  • 1 lb pork tenderloin (about 1 to 1 1/2 lbs) Look for fresh, high-quality pork for best flavor.
  • 1 tbsp olive oil Extra virgin gives a rich flavor, but regular olive oil works too!
  • 2 tsp soy sauce Low-sodium options are great if you're watching your salt intake.
  • 2 tsp Dijon mustard Can use whole grain mustard for more texture.
  • 1 tbsp brown sugar or honey Honey adds a lovely aroma.
  • 1 tsp garlic powder Substitute fresh minced garlic for bolder flavor.
  • 1 tsp onion powder Fresh shallots can be used too.
  • 1 tsp smoked paprika Regular paprika is a substitute if needed.
  • 1/2 tsp kosher salt Adjust to taste!
  • 1/4 tsp black pepper Freshly ground is ideal for best flavor.
  • 1/4 tsp cayenne (optional) For a little heat, feel free to amp this up!

Method
 

Preparation
  1. Preheat the air fryer to 400°F.
  2. Pat the pork tenderloin dry with paper towels and trim any silver skin if needed.
  3. In a small bowl, whisk together the olive oil, soy sauce, Dijon mustard, brown sugar or honey, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper.
  4. Brush the marinade all over the pork tenderloin, making sure it’s well-coated. Let it sit for 10-15 minutes at room temperature.
Cooking
  1. Place the tenderloin in the air fryer basket and air fry at 400°F for 12-16 minutes, flipping halfway through.
  2. Check for doneness using an instant-read thermometer to ensure the internal temperature reaches 145°F.
Serving
  1. Let the pork rest for 5 minutes before slicing into medallions.
  2. Drizzle any accumulated juices over the slices for extra flavor.

Notes

Marinating the pork in advance enhances its flavor. Store leftovers in an airtight container in the fridge for up to four days or freeze for up to three months.
