Ingredients
  

Dry Ingredients
  • 1.25 cups all-purpose flour Use a good quality brand for consistent results.
  • 3 tbsp granulated sugar Feel free to use coconut or brown sugar for a hint of caramel flavor.
  • 0.5 tbsp baking powder Ensure it’s fresh for the best rise.
  • 0.25 tsp salt Simple table salt or sea salt will do.
Wet Ingredients
  • 4 tbsp cold butter Cut into 1/2-inch cubes, keep cold for optimal texture.
  • 1 tsp thyme Freshly minced is best, dried can work in a pinch.
  • 0.5 cups heavy cream Light cream can be substituted but will be less rich.
  • 0.25 tsp vanilla extract Enhances overall sweetness and flavor.
Fruits
  • 4 oz strawberries Finely diced into 1/4-inch pieces; fresh preferred.

Method
 

Preparation
  1. Cut the cold butter into 1/2-inch cubes and place them in the freezer for about 15 minutes.
  2. Preheat the air fryer to 355°F (180°C).
  3. In a large bowl, whisk together the flour, 3 tablespoons of sugar, baking powder, and salt.
  4. Add the cold butter to the dry ingredients and work with your hands or a pastry cutter until it resembles coarse breadcrumbs.
  5. Stir in the freshly minced thyme.
  6. Pour in the heavy cream and vanilla extract, and gently fold in the diced strawberries until a shaggy dough forms.
  7. On parchment paper, press the dough into a circle about 1 inch thick and cut into 8 wedges.
  8. Brush the tops with a mix of cream and a little water; sprinkle with the remaining sugar.
Cooking
  1. Place the wedges in the preheated air fryer basket without touching.
  2. Air fry for 10 to 14 minutes, checking at the 10-minute mark.
  3. Remove and let cool on a wire rack for a few minutes before serving.

Notes

For flaky scones, keep the butter cold. Best enjoyed fresh but can be stored at room temperature for 1-2 days.
