Preparation
- Cut the cold butter into 1/2-inch cubes and place them in the freezer for about 15 minutes.
- Preheat the air fryer to 355°F (180°C).
- In a large bowl, whisk together the flour, 3 tablespoons of sugar, baking powder, and salt.
- Add the cold butter to the dry ingredients and work with your hands or a pastry cutter until it resembles coarse breadcrumbs.
- Stir in the freshly minced thyme.
- Pour in the heavy cream and vanilla extract, and gently fold in the diced strawberries until a shaggy dough forms.
- On parchment paper, press the dough into a circle about 1 inch thick and cut into 8 wedges.
- Brush the tops with a mix of cream and a little water; sprinkle with the remaining sugar.
Cooking
- Place the wedges in the preheated air fryer basket without touching.
- Air fry for 10 to 14 minutes, checking at the 10-minute mark.
- Remove and let cool on a wire rack for a few minutes before serving.
Notes
For flaky scones, keep the butter cold. Best enjoyed fresh but can be stored at room temperature for 1-2 days.
