  • 1.5 ounces Simple Syrup Easily made by dissolving equal parts sugar and water over low heat.
  • 1 ounce Lime Juice Freshly squeezed for the best taste.
  • 2 ounces Light Rum Spiced rum can be used for a sweeter taste.
  • 2 ounces Apple Cider Use high-quality, freshly pressed apple cider.
  • Crushed Ice For a refreshing, slushy texture.
  • Club Soda To give the drink a fizzy finish.
  • Apples, sliced for garnish Choose crisp varieties like Honeycrisp or Fuji.
  • Mint Leaves for garnish Fresh mint to enhance aroma.

Preparation
  1. In a cocktail shaker, add the fresh mint leaves and simple syrup. Use a muddler to gently press on the mint, releasing its oils for about 10-15 seconds.
  2. Add the freshly squeezed lime juice, light rum, apple cider, and a generous scoop of crushed ice into the shaker.
  3. Secure the lid on the shaker and shake vigorously for about 15-20 seconds, until the mixture feels well chilled.
  4. Fill two highball glasses with crushed ice, almost to the top.
  5. Carefully drain the cocktail mixture into the prepared glasses over the ice.
  6. Finish with a splash of club soda and gently stir to combine.
  7. Garnish with sliced apples and a sprig of mint leaves. Serve immediately.

Notes

Store leftover mixtures (without club soda) in the fridge for up to 24 hours. Prepare the mint and simple syrup in advance for quick serving.
