Preparation
- In a bowl, combine the finely shredded chicken, cream cheese, hot sauce, diced onion, and crumbled blue cheese. Microwave the mixture for 30-45 seconds, stirring halfway through.
Assembly
- Lay out 8 slices of bread on a clean work surface. On 4 slices, place one slice of cheese on each. Divide the Buffalo chicken filling evenly among these 4 slices.
- Top each with the remaining cheese slices and finish with the remaining 4 bread slices to create sandwiches. Gently press down on each sandwich.
Cooking
- Coat the outside of each sandwich with cooking spray. Heat a skillet over medium-high heat; cook sandwiches in batches if needed.
- Sauté each side for about 2.5 to 3 minutes until golden brown. Flip and cook for another 1.5 to 2 minutes.
Serving
- Transfer toasted sandwiches to a cutting board. Slice diagonally if desired. Top with lettuce and tomato slices. Serve hot.
Notes
These sandwiches are best enjoyed fresh. Store leftovers in an airtight container in the fridge for up to 2 days. Reheat on a skillet for best results.
