Ingredients
  

Buffalo Chicken Filling
  • 1.5 cups chicken, finely shredded Use rotisserie chicken for best flavor.
  • 1/3 cup cream cheese Let it soften for easier mixing.
  • 1/3 cup hot sauce Frank’s RedHot is recommended.
  • 1/4 cup onion, finely diced Sweet onions are ideal, but red onions can add color.
  • 2 tablespoons crumbled blue cheese Substitute with feta or cheddar if desired.
Sandwich Assembly
  • 8 slices bread Use thicker bread like sourdough or whole wheat.
  • 8 slices cheese Choose melty cheese like Monterey Jack or sharp cheddar.
  • 4 leaves lettuce Crisp romaine works well.
  • 8 slices tomato Heirloom tomatoes add sweetness.
  • to taste spray cooking spray Helps achieve a crispy outside.

Method
 

Preparation
  1. In a bowl, combine the finely shredded chicken, cream cheese, hot sauce, diced onion, and crumbled blue cheese. Microwave the mixture for 30-45 seconds, stirring halfway through.
Assembly
  1. Lay out 8 slices of bread on a clean work surface. On 4 slices, place one slice of cheese on each. Divide the Buffalo chicken filling evenly among these 4 slices.
  2. Top each with the remaining cheese slices and finish with the remaining 4 bread slices to create sandwiches. Gently press down on each sandwich.
Cooking
  1. Coat the outside of each sandwich with cooking spray. Heat a skillet over medium-high heat; cook sandwiches in batches if needed.
  2. Sauté each side for about 2.5 to 3 minutes until golden brown. Flip and cook for another 1.5 to 2 minutes.
Serving
  1. Transfer toasted sandwiches to a cutting board. Slice diagonally if desired. Top with lettuce and tomato slices. Serve hot.

Notes

These sandwiches are best enjoyed fresh. Store leftovers in an airtight container in the fridge for up to 2 days. Reheat on a skillet for best results.
