Preparation
- Preheat your oven to 350°F (175°C). Spray an 8x8-inch baking dish with nonstick cooking spray and set it aside.
- In a large bowl, stir together the melted butter and brown sugar until well combined, about 2-3 minutes.
- Add in the eggs and egg yolk, one at a time, mixing well after each addition. Pour in the vanilla extract and mix to combine.
- In a separate medium bowl, whisk together the flour, cornstarch, baking powder, salt, and apple pie spice.
- Gradually add the dry ingredients to the butter mixture, mixing on low speed until fully incorporated.
- Gently fold in the diced apples with a spatula until evenly distributed throughout the batter.
- Spread the batter evenly into the prepared baking dish, smoothing it out with your spatula.
Baking
- Bake in the preheated oven for 50-55 minutes, or until the edges turn a golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan on a wire rack. Once cool, drizzle with caramel sauce before serving.
