  • 2 teaspoons cornstarch Helps keep the cake light and fluffy.
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon apple pie spice Can use a mix of cinnamon and nutmeg.

Preparation
  1. Preheat your oven to 350°F (175°C). Spray an 8x8-inch baking dish with nonstick cooking spray and set it aside.
  2. In a large bowl, stir together the melted butter and brown sugar until well combined, about 2-3 minutes.
  3. Add in the eggs and egg yolk, one at a time, mixing well after each addition. Pour in the vanilla extract and mix to combine.
  4. In a separate medium bowl, whisk together the flour, cornstarch, baking powder, salt, and apple pie spice.
  5. Gradually add the dry ingredients to the butter mixture, mixing on low speed until fully incorporated.
  6. Gently fold in the diced apples with a spatula until evenly distributed throughout the batter.
  7. Spread the batter evenly into the prepared baking dish, smoothing it out with your spatula.
Baking
  1. Bake in the preheated oven for 50-55 minutes, or until the edges turn a golden brown and a toothpick inserted into the center comes out clean.
  2. Let the cake cool completely in the pan on a wire rack. Once cool, drizzle with caramel sauce before serving.
