- Pour the almond milk into a blender along with the blueberries, maple syrup, vanilla essence, and a pinch of salt. Blend until smooth, about 1-2 minutes.
- Transfer the mixture into a jar or container and stir in the chia seeds evenly until combined.
- Let the mixture sit at room temperature for 5 minutes to allow the chia seeds to soak.
- Cover the jar and refrigerate for at least 30 minutes, or overnight for best results.
- Before serving, give it one last stir and top with fresh blueberries and a sprinkle of granola if desired.
Notes
This pudding can be made up to a week in advance. Great for meal prep. If too thick, stir in a splash of almond milk.
