  • 1 cup almond milk Unsweetened almond milk works best.
  • 3/4 cup blueberries Fresh or frozen blueberries can be used.
  • 1 tbsp maple syrup Can substitute with honey or agave.
  • 1/2 tsp vanilla essence Real vanilla extract is recommended.
  • 3 tbsp chia seeds Use high-quality, organic chia seeds.
  • a pinch salt Enhances flavor.

Method
 

Preparation
  1. Pour the almond milk into a blender along with the blueberries, maple syrup, vanilla essence, and a pinch of salt. Blend until smooth, about 1-2 minutes.
  2. Transfer the mixture into a jar or container and stir in the chia seeds evenly until combined.
  3. Let the mixture sit at room temperature for 5 minutes to allow the chia seeds to soak.
  4. Cover the jar and refrigerate for at least 30 minutes, or overnight for best results.
  5. Before serving, give it one last stir and top with fresh blueberries and a sprinkle of granola if desired.

Notes

This pudding can be made up to a week in advance. Great for meal prep. If too thick, stir in a splash of almond milk.
