Preparation
  1. Preheat a heavy-bottomed cast iron skillet over medium heat until hot.
  2. In a bowl, mix the shredded chicken with the mashed avocado, and season generously with salt and pepper until well combined.
  3. Spread butter on one side of each slice of bread to achieve that perfect golden crust.
Cooking
  1. On the non-buttered side, layer the chicken and avocado mixture evenly, then sprinkle on the cheese.
  2. Top with the second slice of bread, buttered side facing up.
  3. Place the sandwich in the skillet and grill until golden brown on both sides and the cheese is melted, approximately 3-4 minutes per side.
  4. Remove from skillet, slice into halves for easy handling, and serve immediately.

Notes
