- Preheat a heavy-bottomed cast iron skillet over medium heat until hot.
- In a bowl, mix the shredded chicken with the mashed avocado, and season generously with salt and pepper until well combined.
- Spread butter on one side of each slice of bread to achieve that perfect golden crust.
Cooking
- On the non-buttered side, layer the chicken and avocado mixture evenly, then sprinkle on the cheese.
- Top with the second slice of bread, buttered side facing up.
- Place the sandwich in the skillet and grill until golden brown on both sides and the cheese is melted, approximately 3-4 minutes per side.
- Remove from skillet, slice into halves for easy handling, and serve immediately.
