  • 1 cup shredded lettuce

  • 4 large tortillas (flour or whole wheat) Use gluten-free options if needed.

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season chicken breasts with smoked paprika, cumin, salt, and pepper.
  3. Grill chicken for 6-7 minutes per side until fully cooked and juices run clear.
  4. Let chicken rest for a few minutes, then slice it into strips.
  5. Warm tortillas on the grill for about 30 seconds on each side.
Assembly
  1. On each tortilla, place a bed of rice and black beans, followed by grilled chicken, bell peppers, lettuce, and chipotle ranch dressing.
  2. Roll the tortillas tightly, folding in the sides to avoid spills.
  3. Serve immediately with tortilla chips or guacamole.
