Base Ingredients
  • 2.25 cups Greek yogurt Whole milk Greek yogurt is preferred for creaminess.
  • 1/3 cup natural peanut butter Creamy and stirred well; look for organic options.
  • 1 tablespoon maple syrup Use pure maple syrup or honey.
  • 1/2 cup peanuts, roughly chopped Use salted or unsalted based on preference.
  • 1 pinch sea salt Enhances flavor.
Topping
  • 1/4 cup chocolate chips or chopped chocolate Dark chocolate is preferred for this recipe.
  • 2.5 teaspoons coconut oil Helps the chocolate set and gives a sheen.

Method
 

Mix the Base
  1. In a medium bowl, combine the Greek yogurt, peanut butter, and maple syrup. Stir until fully blended (about 2-3 minutes) until creamy with no lumps.
Add Crunch
  1. Fold in the chopped peanuts and a pinch of sea salt for delightful crunch.
Divide & Assemble
  1. Spoon the mixture evenly into 4 small cups or containers, leaving about 1/2 inch of space.
Melt the Chocolate
  1. In a small microwave-safe bowl, combine the chocolate and coconut oil. Heat in 30-second intervals until melted and smooth (about 1.5 minutes total). Stir well for even melting.
Top with Chocolate
  1. Pour the melted chocolate over the yogurt mixture in each container, smoothing out as needed.
Chill to Set
  1. Cover the containers and refrigerate for 30 to 60 minutes until the chocolate sets completely.

Notes

These cups can be made ahead for convenient snacks. Store covered in the fridge for up to 5 days.
