  • 1/2 cup confectioners' sugar Adjust to taste for sweetness
  • 1 teaspoon vanilla extract Pure vanilla is best for flavor
  • 8 ounces frozen whipped topping, thawed Cool Whip is recommended for authenticity
For the Salad
  • 2 cups frosted circus animal cookies, coarsely chopped Plus more for garnish
  • 1 cup mini marshmallows
  • 2 tablespoons rainbow nonpareils For a colorful touch

Method
 

Preparation
  1. In a large bowl, combine the softened cream cheese, confectioners' sugar, and vanilla extract. Beat with a hand mixer until smooth and creamy for about 2-3 minutes.
  2. Gently fold in the thawed whipped topping until fully incorporated, using a spatula to retain lightness.
  3. Fold in the coarsely chopped frosted circus cookies and mini marshmallows until evenly mixed.
  4. Finally, fold in the rainbow nonpareils to add color.
Chilling
  1. You can serve immediately or chill in the refrigerator for at least 30 minutes to allow flavors to meld. Garnish with extra cookie pieces before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. You can prepare a day in advance and garnish just before serving.
