Ingredients

For the Brownie Layer
  • 4.5 oz dark chocolate Use high-quality chocolate for the best flavor; I recommend brands like Ghirardelli or Lindt.
  • 1 cup butter (melted and cooled slightly) Makes the brownies moist. Be sure to let it cool so it doesn’t cook the eggs!
  • 3/4 cup sweetener Coconut sugar recommended for deeper flavor, but feel free to swap in your favorite sweetener.
  • 3 eggs (room temperature) Room temperature eggs help create a smooth batter.
  • 1 tsp vanilla extract Always opt for pure vanilla for authenticity.
  • 1/4 cup almond flour Adds a beautiful texture and richness; an excellent gluten-free substitute.
  • 2 tbsp coconut flour Helps with moisture retention, but be cautious as too much can dry out the batter.
  • 1/2 cup chocolate chips Semi-sweet or dark, depending on your preference for sweetness.
For the Cookie Dough Layer
  • 1 oz cream cheese For added creaminess in the cookie dough layer.
  • 4 tbsp butter (softened to room temperature) For that luxurious cookie dough texture.
  • 1/3 cup sweetener Adjust based on your preference.
  • 1 tsp molasses Provides a rich, darker sweetness typical of cookie dough.
  • 1.5 tsp vanilla extract Double the vanilla for an extra aromatic boost!
  • 1 tsp coconut flour Just a touch for thickening up the cookie dough.
  • 1/8 tsp sea salt Elevates sweetness and enhances flavor, don’t skip it!

Method

Preparation
  1. Preheat your oven to 350°F and grease a 9x13 inch baking dish, considering using parchment paper for easier removal.
  2. Chop dark chocolate into small pieces and place in a microwave-safe bowl with melted butter. Microwave in 30-second intervals until melted and smooth (about 1-2 minutes), then let cool for about 10 minutes.
Mixing
  1. In a separate bowl, whisk together the sweetener, eggs, and vanilla until combined. Pour in the cooled chocolate mixture and stir until smoothly blended.
  2. Gently fold in the almond flour and coconut flour, then stir in the chocolate chips.
Baking
  1. Pour the brownie batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick comes out with a few moist crumbs.
Cookie Dough Layer
  1. In the meantime, prepare the cookie dough layer by mixing softened butter, cream cheese, sweetener, vanilla extract, and molasses until creamy and fluffy.
  2. Fold in the almond flour, coconut flour, and chocolate chips.
Assembly and Cooling
  1. Once the brownies are baked and have cooled for 10-15 minutes, spread the cookie dough mixture evenly over the brownies and sprinkle with a pinch of sea salt.
  2. Allow to cool completely before slicing into squares.

Notes

Using a plastic knife to slice the brownies will help keep them from crumbling. Storage is important; keep them in an airtight container for up to 5 days.
