Preparation
- Preheat your oven to 350°F and grease a 9x13 inch baking dish, considering using parchment paper for easier removal.
- Chop dark chocolate into small pieces and place in a microwave-safe bowl with melted butter. Microwave in 30-second intervals until melted and smooth (about 1-2 minutes), then let cool for about 10 minutes.
Mixing
- In a separate bowl, whisk together the sweetener, eggs, and vanilla until combined. Pour in the cooled chocolate mixture and stir until smoothly blended.
- Gently fold in the almond flour and coconut flour, then stir in the chocolate chips.
Baking
- Pour the brownie batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick comes out with a few moist crumbs.
Cookie Dough Layer
- In the meantime, prepare the cookie dough layer by mixing softened butter, cream cheese, sweetener, vanilla extract, and molasses until creamy and fluffy.
- Fold in the almond flour, coconut flour, and chocolate chips.
Assembly and Cooling
- Once the brownies are baked and have cooled for 10-15 minutes, spread the cookie dough mixture evenly over the brownies and sprinkle with a pinch of sea salt.
- Allow to cool completely before slicing into squares.
Notes
Using a plastic knife to slice the brownies will help keep them from crumbling. Storage is important; keep them in an airtight container for up to 5 days.
