  • 1 cup Mozzarella cheese For layering.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Chop all your vegetables and proteins into uniform sizes (about 1-inch pieces).
  3. In a skillet, heat a splash of olive oil over medium heat. Brown the ground beef until fully cooked, approximately 5-7 minutes.
Assembly
  1. In a large mixing bowl, combine the cooked protein, cream of mushroom soup, diced tomatoes, broth, chopped vegetables, seasonings, and pre-cooked brown rice.
  2. Fold in 1 cup of the cheddar cheese.
  3. Transfer the mixture into a greased 9x13 inch baking dish. Top with remaining mozzarella cheese and sprinkle with panko bread crumbs.
Baking
  1. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and edges are lightly golden.
  2. Let rest for a few minutes before serving.

Notes

Casseroles can be made ahead and stored in the fridge for up to 3-4 days or frozen for up to 3 months. Cover tightly when freezing to retain freshness.
