Preparation
- Preheat your oven to 350°F (175°C).
- Chop all your vegetables and proteins into uniform sizes (about 1-inch pieces).
- In a skillet, heat a splash of olive oil over medium heat. Brown the ground beef until fully cooked, approximately 5-7 minutes.
Assembly
- In a large mixing bowl, combine the cooked protein, cream of mushroom soup, diced tomatoes, broth, chopped vegetables, seasonings, and pre-cooked brown rice.
- Fold in 1 cup of the cheddar cheese.
- Transfer the mixture into a greased 9x13 inch baking dish. Top with remaining mozzarella cheese and sprinkle with panko bread crumbs.
Baking
- Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and edges are lightly golden.
- Let rest for a few minutes before serving.
Notes
Casseroles can be made ahead and stored in the fridge for up to 3-4 days or frozen for up to 3 months. Cover tightly when freezing to retain freshness.
