Preparation
- Soak the dates in hot water for 10 minutes and then drain.
- In a food processor, blend the softened dates with chocolate protein powder, cocoa powder, maple syrup (2.5 tbsp), vanilla, and salt until smooth.
- In a bowl, mix the cottage cheese, vanilla protein powder, almond flour (1.25 cups), cashew butter, remaining maple syrup, and vanilla until smooth.
- Gently fold in the mini chocolate chips into the cottage cheese mixture.
- Line an 8x8-inch baking dish with parchment paper.
- Press the date-chocolate mixture evenly into the bottom of the dish.
- Spread the cottage cheese layer over the brownie base and smooth it out.
- Freeze for at least 1 hour until firm.
- Once set, cut into 9-12 squares and serve.

Store in an airtight container in the freezer for up to three months. Perfect for last-minute desserts and parties.
