For the brownie base
  • 10 pieces dates, soaked in hot water for 10 minutes Medjool dates recommended for their rich flavor.
  • 1/2 cup almond flour A delightful gluten-free alternative.

For the cottage cheese layer
  • 1 cup cottage cheese Full-fat for extra creaminess.
  • 1/2 cup vanilla protein powder Optional booster for added creaminess.
  • 1 1/4 cups almond flour For the top layer.
  • 2 1/2 tbsp maple syrup To sweeten the cottage cheese layer.
  • 2 tbsp cashew butter Adds creaminess; substitute almond butter if preferred.
  • 1 1/2 tsp vanilla extract For extra vanilla flavor.
  • 1/3 cup mini chocolate chips Enjoy Life’s brand is allergy-friendly.

Method
 

Preparation
  1. Soak the dates in hot water for 10 minutes and then drain.
  2. In a food processor, blend the softened dates with chocolate protein powder, cocoa powder, maple syrup (2.5 tbsp), vanilla, and salt until smooth.
  3. In a bowl, mix the cottage cheese, vanilla protein powder, almond flour (1.25 cups), cashew butter, remaining maple syrup, and vanilla until smooth.
  4. Gently fold in the mini chocolate chips into the cottage cheese mixture.
  5. Line an 8x8-inch baking dish with parchment paper.
  6. Press the date-chocolate mixture evenly into the bottom of the dish.
  7. Spread the cottage cheese layer over the brownie base and smooth it out.
  8. Freeze for at least 1 hour until firm.
  9. Once set, cut into 9-12 squares and serve.

Notes

Store in an airtight container in the freezer for up to three months. Perfect for last-minute desserts and parties.
