  • 4 large large flour tortillas (10-inch or bigger) Opt for high-quality brands like Mission or La Banderita.
  • 2 cups shredded cheddar cheese Preferably a sharp variety for more flavor.
  • 1 cup cooked protein (chicken, beef, pork, tofu, or canned beans) Use leftovers or rotisserie chicken for convenience.
  • 1/2 cup finely chopped red onion and/or green onion Add jalapeño for a spicy kick.
  • 1 cup finely chopped cooked veggies (zucchini, bell peppers, etc.) Fresh or leftover veggies work; sauté for extra flavor.
  • 1 cup chopped raw vegetables (tomatoes, radishes, lettuce, cilantro) Adds freshness.
  • 1 cup dips (avocado, salsa, sour cream, or Greek yogurt) For serving.

Preparation
  1. Preheat a large griddle or non-stick pan over medium heat.
  2. Assemble the quesadillas by laying tortillas on the skillet, dividing toppings among half of each tortilla.
  3. Gently fold each tortilla over and cook for about 5 minutes until golden brown.
  4. Flip the quesadillas carefully using a spatula and cook for an additional 2-3 minutes until crispy.
  5. Serve with fresh raw toppings and your choice of dips.

Notes

Use fresh ingredients and feel free to pre-chop veggies for quicker assembly. Store leftovers in an airtight container for 2-3 days, or freeze uncooked quesadillas for up to a month.
