  • 2 cups Medjool dates (pitted and approximately 12 oz by weight) Opt for soft, fresh dates for the best flavor and texture.
  • 1/2 cup creamy peanut butter Natural peanut butter is preferred for a healthier twist, but any creamy or chunky style you love will work.
  • 3/4 cup chocolate chips Choose semi-sweet, milk, or dark. Use high-quality chips for rich chocolate flavor.
  • 1/4 cup roasted salted peanuts These add a delightful crunch—go for unsalted if you prefer.
  • 1/4 tsp flaky sea salt Use to accentuate the sweetness of the chocolate and dates.

Method
 

Preparation
  1. Pit and halve the Medjool dates. Spread them on a baking sheet lined with parchment paper in a single layer.
  2. Cover the dates with another sheet of parchment paper and press down gently to flatten.
  3. Warm the peanut butter in the microwave or a small saucepan until it's runny and easy to drizzle.
  4. Pour the warm peanut butter evenly over the flattened dates.
  5. Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  6. Drizzle the melted chocolate over the peanut butter and date layer, smoothing it out with a spoon.
  7. Sprinkle roasted peanuts over the chocolate and finish with flaky sea salt.
Chilling
  1. Place the baking tray in the refrigerator and chill until the bark is firm to the touch, about 1 to 2 hours.
Serving
  1. Once set, break or cut into pieces and enjoy this scrumptious treat!

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for 2 weeks. Can freeze for up to 3 months.
