  • 3 packs ramen noodles Discard the flavor packets. You can use any ramen style you love, including whole wheat or gluten-free options.

  1. Cook the Noodles: Bring a large pot of water to a rolling boil over high heat. Add the ramen noodles and cook according to package directions (usually about 4-5 minutes). The noodles should be al dente. Once cooked, drain and set aside.
  2. Sauté the Turkey: While the noodles cook, heat sesame oil in a large pan over medium-high heat. Add the ground turkey and break it into small pieces as it cooks, about 5-7 minutes until mostly browned.
  3. Add Aromatics: When the turkey is nearly cooked, add minced ginger and cinnamon. Stir for about 30 seconds until fragrant.
  4. Incorporate Veggies: Add the finely diced onion, sliced mushrooms, and shredded carrots to the pan. Cook for around 3-4 minutes until the onions are translucent and veggies are softened.
  5. Build the Sauce: Pour in the soy sauce, water, rice vinegar, and sriracha. Stir well to combine. Bring the mixture to a simmer, cover, and reduce the heat to medium-low. Let it cook for 5 minutes so all the flavors meld.
  6. Add the Finishing Touch: Stir in the tablespoon of butter just until it melts, creating a rich sauce.
  7. Combine Noodles: Gently toss the cooked noodles into the turkey mixture, ensuring every strand is coated in that delicious sauce.
  8. Plate and Garnish: Serve immediately, garnished with a sprinkle of green onions and sesame seeds.

Notes

Make sure your butter is at room temperature to melt seamlessly into the dish. Fresh ingredients yield the best flavor, but don’t hesitate to use frozen veggies in a time crunch!
