Dry Ingredients
  • 1.25 cups all-purpose flour Can substitute with gluten-free flour.
  • 1.25 cups rolled oats Use old-fashioned oats for the best chewiness.
  • 0.75 cups brown sugar Light or dark brown sugar works well.
  • 0.25 teaspoons baking soda Provides a slight lift.
  • 0.25 teaspoons salt Balances sweetness.
  • 0.25 teaspoons ground cinnamon Enhances flavor.
Wet Ingredients
  • 0.5 cups butter At room temperature and unsalted.
  • 0.75 cups raspberry jam Use homemade or favorite store-bought jam.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and line an 8x8 inch baking dish with foil.
  2. In a large bowl, whisk together the flour, oats, brown sugar, baking soda, salt, and cinnamon until well combined.
  3. Cut in the cold butter using a pastry blender until the mixture resembles coarse crumbs.
  4. Press 2 cups of the mixture into the bottom of the prepared dish and spread the raspberry jam evenly over the base.
  5. Sprinkle the remaining oat mixture over the jam and gently press it down.
Baking
  1. Place the dish in the oven and bake for 35 to 40 minutes, until the top is golden brown and the jam is bubbly.
  2. Allow the bars to cool completely in the pan on a wire rack before lifting them out and cutting into squares.

Notes

For extra flavor, toast the oats before mixing. Avoid cutting while warm to prevent crumbling. Store in an airtight container for up to a week.
