  • 1 1/4 cups full-fat plain Greek yogurt Dairy-free alternative can be used.
  • 3 tablespoons honey Maple syrup can be used for a vegan option.
  • 1 cup blueberries, thoroughly dried Fresh blueberries work best; if using frozen, thaw and dry them.
  • 1/2 cup almonds, chopped into 1/4 inch pieces Raw almonds preferred, but roasted can be used.
  • 1/2 teaspoon vanilla extract Pure vanilla enhances flavors.

Preparation
  1. Pat the blueberries completely dry with paper towels.
  2. Chop the almonds into 1/4 inch pieces.
  3. Line a baking sheet with parchment paper.
  4. In a medium bowl, whisk together yogurt, honey, and vanilla extract until smooth.
  5. Gently fold in dried blueberries and chopped almonds.
  6. Using a small ice cream scoop, drop portions onto the prepared baking sheet, spacing them about 1 inch apart.
  7. Flatten the tops slightly with a wet spoon.
  8. Freeze for at least 2 hours until firm.
  9. Transfer to an airtight container or freezer bag for storage.

Notes

These bites are best enjoyed straight from the freezer. They can last in an airtight container for up to three months. Consider adding a drizzle of chocolate over the top before freezing for a delicious twist!
