Ingredients
  

For the Base
  • 3/4 cup granola Choose a variety you love, preferably free from added sugars.
  • 1 1/2 cup yogurt Greek yogurt is recommended for creaminess and extra protein.
  • 1/2 cup peanut butter Substitute with sunflower seed butter for nut-free option.
  • 2/3 cup vanilla protein powder Use a brand that blends well.
  • 1 pinch salt Enhances sweetness and richness.
For the Topping
  • 1/3 cup chocolate chips, melted Dark or semi-sweet chocolate recommended.
  • 1 tsp coconut oil Helps chocolate melt smoothly.

Method
 

Preparation
  1. Line a standard 12-cup muffin tin with paper liners and measure out 1 tablespoon of granola for each cup.
  2. In a medium bowl, combine yogurt, peanut butter, and protein powder; whisk until smooth and creamy.
  3. Spoon the yogurt mixture over the granola base in each muffin cup, filling them about three-quarters full. Smooth the top.
  4. Place the muffin tin in the freezer for about 30 minutes.
  5. Melt the chocolate chips and coconut oil in the microwave, stirring until smooth. Let cool slightly.
  6. Pour a spoonful of melted chocolate over each yogurt cup and sprinkle remaining granola on top.
  7. Return the muffin tin to the freezer for at least 45 minutes.
Serving
  1. Remove the yogurt bites from the muffin tin and store them in an airtight container in the freezer.
  2. Let sit at room temperature for 20-30 minutes before enjoying.

Notes

These bites can be stored in the freezer for up to 2 weeks. Ensure your peanut butter is at room temperature for easy mixing. You can experiment with flavors and toppings.
