Preparation
- Line a standard 12-cup muffin tin with paper liners and measure out 1 tablespoon of granola for each cup.
- In a medium bowl, combine yogurt, peanut butter, and protein powder; whisk until smooth and creamy.
- Spoon the yogurt mixture over the granola base in each muffin cup, filling them about three-quarters full. Smooth the top.
- Place the muffin tin in the freezer for about 30 minutes.
- Melt the chocolate chips and coconut oil in the microwave, stirring until smooth. Let cool slightly.
- Pour a spoonful of melted chocolate over each yogurt cup and sprinkle remaining granola on top.
- Return the muffin tin to the freezer for at least 45 minutes.
Serving
- Remove the yogurt bites from the muffin tin and store them in an airtight container in the freezer.
- Let sit at room temperature for 20-30 minutes before enjoying.
Notes
These bites can be stored in the freezer for up to 2 weeks. Ensure your peanut butter is at room temperature for easy mixing. You can experiment with flavors and toppings.
