  • 1.25 cups yogurt (Greek or regular, preferably full-fat) Opt for organic brands like Fage or Chobani
  • 1 cup strawberries, hulled and chopped into 1/4-inch pieces Fresh is always best, but frozen fruits can work in a pinch
  • 1 tablespoon honey Adjust based on sweetness preference; can substitute with maple syrup or agave nectar if vegan
  • 0.5 teaspoon vanilla extract
  • 1 cup blackberries Fresh is preferred

Method
 

Preparation
  1. In a blender, combine 1.25 cups of yogurt, hulled and chopped strawberries, 1 tablespoon honey, and 0.5 teaspoon vanilla extract. Blend for about 30-45 seconds until smooth.
  2. Pour the strawberry mixture into a bowl and set aside.
  3. Clean the blender or use a separate one to combine 1.25 cups of yogurt, 1 cup blackberries, 1 tablespoon honey, and 0.5 teaspoon vanilla extract. Blend until rich purple.
  4. Spoon the strawberry yogurt mixture into half of the ice cube tray compartments, filling each about three-quarters full.
  5. Spoon the blackberry yogurt mixture into the remaining compartments, filling them to the same level.
  6. Carefully place the filled ice cube tray in the freezer and let freeze for at least 4-6 hours or until completely solid.
  7. Remove the bites from the tray and store them in an airtight, freezer-safe container. They can be stored for up to 3 weeks.

Notes

For best results, ensure yogurt is at room temperature. Use parchment paper between layers when storing to prevent sticking. If bites are icy, consider using full-fat yogurt.
