Preparation
- In a blender, combine 1.25 cups of yogurt, hulled and chopped strawberries, 1 tablespoon honey, and 0.5 teaspoon vanilla extract. Blend for about 30-45 seconds until smooth.
- Pour the strawberry mixture into a bowl and set aside.
- Clean the blender or use a separate one to combine 1.25 cups of yogurt, 1 cup blackberries, 1 tablespoon honey, and 0.5 teaspoon vanilla extract. Blend until rich purple.
- Spoon the strawberry yogurt mixture into half of the ice cube tray compartments, filling each about three-quarters full.
- Spoon the blackberry yogurt mixture into the remaining compartments, filling them to the same level.
- Carefully place the filled ice cube tray in the freezer and let freeze for at least 4-6 hours or until completely solid.
- Remove the bites from the tray and store them in an airtight, freezer-safe container. They can be stored for up to 3 weeks.
Notes
For best results, ensure yogurt is at room temperature. Use parchment paper between layers when storing to prevent sticking. If bites are icy, consider using full-fat yogurt.
