  • 0.5 cup yellow pepper, diced Feel free to substitute with red or green bell peppers.
  • 1.75 cups sweet potato, peeled and diced into 1/2-inch cubes The sweeter the better! Look for firm sweet potatoes.
  • Salt, to taste Avoid table salt; use sea salt or Himalayan for best flavor.
  • Black pepper, to taste
  • 0.25 tsp red chili flakes Adjust according to your heat tolerance.
  • 0.5 tsp smoked paprika For that delightful smoky undertone.
  • 0.75 cup mozzarella cheese Use fresh mozzarella for a creamier texture.

Preparation
  1. Start by peeling and dicing the sweet potatoes into 1/2-inch cubes. Finely mince the garlic, dice the onions, and chop the yellow pepper. Preheat your oven to 400°F (200°C).
Cooking
  1. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the ground turkey and minced garlic, breaking it up as it cooks. Sauté for about 5 minutes until mostly browned.
  2. Stir in the diced onions and yellow pepper to the skillet, cooking for an additional 3-4 minutes until they soften.
  3. Add the diced sweet potatoes, red chili flakes, smoked paprika, salt, and black pepper. Stir well to coat everything evenly and let the spices toast for about 1 minute.
  4. Reduce the heat to medium, cover the skillet with a lid, and cook for 8-10 minutes until the sweet potatoes are fork-tender.
  5. Once the sweet potatoes are tender, sprinkle the mozzarella cheese generously over the mixture. Transfer the skillet to your preheated oven and bake for 5-7 minutes, until the cheese is bubbly and slightly golden.
Serving
  1. Let it cool for 2-3 minutes before garnishing with fresh parsley. Serve hot and enjoy.

Notes

Make sure your sweet potatoes are at room temperature for even cooking. Store leftovers in an airtight container in the fridge for up to 3 days. This dish can be prepped a day in advance.
