Main Ingredients
  • 4 pieces pork chops (¾ to 1 inch thick, bone-in or boneless, about 2.5 to 3 lbs total) Look for chops that are fresh with a nice marbling for maximum juiciness.
  • 4 tsp olive oil Extra virgin gives the richest flavor but regular olive oil works too.
  • 2 tbsp brown sugar (light or dark) Both will work beautifully, but dark brown sugar will give a more intense flavor.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp dried thyme or parsley (optional) Enhance flavor with fresh herbs if you have them.
  • 2 tsp kosher salt
  • ½ tsp black pepper

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  2. In a small bowl, combine the olive oil, brown sugar, garlic powder, onion powder, smoked paprika, thyme or parsley, kosher salt, and black pepper. Mix until well combined into a paste.
Cooking
  1. Pat the pork chops dry with paper towels and rub the spice mixture generously over each chop.
  2. Place the chops in the preheated air fryer basket in a single layer and cook for 12-15 minutes, flipping halfway through.
  3. Use a meat thermometer to check that the pork chops reach an internal temperature of 145°F (63°C). Let them rest for 5 minutes before serving.

Notes

For best results, bring pork chops to room temperature before cooking. Consider marinating the chops for extra flavor.
