Preparation
- Preheat your oven to 350 degrees F (175 degrees C). Line a 9x13 inch pan with parchment paper and spray it with nonstick cooking spray.
- In a medium bowl, blend 1 cup unsalted butter, 2 cups all-purpose flour, and 1/2 cup granulated sugar with a pastry cutter or a fork until it resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared pan and bake for 23-25 minutes, or until firm and golden.
- In another bowl, whisk together 1 1/2 cups granulated sugar and 1/4 cup flour, followed by the 4 beaten eggs and 2/3 cup lemon juice until fully combined.
- Pour the lemon filling over the warm crust and sprinkle with 1 1/2 cups fresh blueberries, pressing them slightly into the filling.
- Bake for another 28-30 minutes, until the sides are just golden. The middle should be slightly wobbly but will set as it cools.
- Allow the bars to cool to room temperature, then refrigerate for at least 2 hours to set completely.
- Dust with confectioners' sugar before serving.
Notes
These bars can be stored in an airtight container in the fridge for up to 5 days or frozen for up to 2 months. For best flavor, use fresh ingredients.
