Ingredients
  

For the crust
  • 2 cups all-purpose flour Use a high-quality brand for consistent results.

For the lemon filling
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour To thicken the filling.
  • 4 large eggs, room temperature, beaten Helps them incorporate better.
  • 2/3 cup freshly squeezed lemon juice About 3-4 lemons, depending on size.
  • 1 1/2 cups fresh blueberries Fresh berries ensure the best flavor; frozen can alter the texture.
  • Confectioners' sugar for dusting A light sprinkle adds a pretty finish.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C). Line a 9x13 inch pan with parchment paper and spray it with nonstick cooking spray.
  2. In a medium bowl, blend 1 cup unsalted butter, 2 cups all-purpose flour, and 1/2 cup granulated sugar with a pastry cutter or a fork until it resembles coarse crumbs.
  3. Press the mixture evenly into the bottom of the prepared pan and bake for 23-25 minutes, or until firm and golden.
  4. In another bowl, whisk together 1 1/2 cups granulated sugar and 1/4 cup flour, followed by the 4 beaten eggs and 2/3 cup lemon juice until fully combined.
  5. Pour the lemon filling over the warm crust and sprinkle with 1 1/2 cups fresh blueberries, pressing them slightly into the filling.
  6. Bake for another 28-30 minutes, until the sides are just golden. The middle should be slightly wobbly but will set as it cools.
  7. Allow the bars to cool to room temperature, then refrigerate for at least 2 hours to set completely.
  8. Dust with confectioners' sugar before serving.

Notes

These bars can be stored in an airtight container in the fridge for up to 5 days or frozen for up to 2 months. For best flavor, use fresh ingredients.
