Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and kosher salt.
  3. In a stand mixer, combine the room-temperature butter and brown sugar. Mix on medium speed until smooth and creamy, about 1-2 minutes.
  4. Add in the egg and mix until just combined.
  5. Incorporate the maple syrup, vanilla extract, and maple extract. Beat on high for an additional minute.
Baking
  1. Reduce the mixer to low speed and add the flour mixture. Mix until just combined.
  2. Use a cookie scoop to portion out the dough. Roll them into balls and place them on the lined sheets, leaving space between each.
  3. Bake for 8-9 minutes until golden at the edges but still a little doughy in the center.
  4. Let them cool for 5 minutes on the baking sheet before transferring to a wire rack.
  5. For the glaze, whisk together confectioners' sugar, maple syrup, melted butter, maple extract, and a pinch of salt until smooth.
  6. Drizzle the glaze over the cookies and let it set for a few minutes before serving.
