For the chocolate
  • 1 cup white chocolate chips Choose high-quality for a creamy texture.

Method
 

Preparation
  1. Brown the butter in a medium saucepan over medium-low heat, stirring constantly until it turns a chestnut brown.
  2. Remove from heat and stir in the brown and granulated sugars until smooth. Let the mixture chill for about 10 minutes.
  3. Preheat your oven to 325°F (163°C).
  4. Whisk in the eggs and vanilla extract until well combined.
  5. In a separate bowl, combine the flour, oats, salt, baking soda, and cinnamon.
  6. Fold the dry ingredients into the wet mixture gently until just combined.
  7. Fold in most of the chocolate chips, reserving some for the top.
Baking
  1. Spread the dough in a greased 9x13 inch baking dish and sprinkle reserved chocolate chips on top.
  2. Bake for 35-40 minutes or until edges are golden and a toothpick comes out clean.
  3. Let cool for about 20 minutes before slicing.

Notes

Store leftover bars in an airtight container at room temperature for up to five days or freeze for up to three months. To maintain chewiness, avoid overmixing and store properly.
