Ingredients
  

For the Pork Chops
  • 4 pieces bone-in or boneless pork chops (¾-1 inch thick) Bone-in chops are juicier due to the marrow.
  • 1 tsp kosher salt Crucial for flavor; don’t substitute with table salt directly.
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • ¼ tsp cayenne Optional for an extra kick.
  • 1 tbsp olive oil
  • 2 cups chicken broth Can substitute with vegetable broth.
  • 3 tbsp Dijon mustard Adds depth; can substitute with yellow mustard.
  • 1 tbsp soy sauce Or use 1 1/2 tsp more kosher salt.
  • 1/4 tsp each black pepper + kosher salt
  • ½ cup heavy cream Or use milk for a lighter option.
  • 1 1/2 tbsp cornstarch For thickening the gravy.

Method
 

Preparation
  1. Rub both sides of the pork chops with kosher salt, black pepper, garlic powder, onion powder, thyme, and cayenne if using.
  2. Switch your Instant Pot to Sauté mode. When the oil is hot, add the pork chops and sear each side for 2-3 minutes until golden brown. Remove and set aside.
  3. Pour the chicken broth into the pot, add Dijon mustard and soy sauce, scraping up any browned bits with a wooden spoon.
  4. Return the pork chops to the pot, secure the lid, and set to cook on high pressure for 35 minutes. Once done, let naturally release for 10 minutes before releasing any remaining steam.
  5. Take the pork chops out and set aside. In a small bowl, mix cornstarch into cream (or milk) until smooth, then whisk into the remaining sauce in the pot, switching to Sauté mode and simmering for 2 minutes until thickened. Adjust seasoning if necessary.
  6. Serve the pork chops on plates and spoon gravy generously over them. Pair with mashed potatoes, rice, or roasted veggies.

Notes

For extra flavor, marinate pork chops for a few hours. Store leftovers in an airtight container for up to 3 days. You can prep seasoning ahead of time for convenience.
