  • 2 tbsp oil Avocado oil is preferred for its neutral flavor.
  • 1 cup finely-chopped onion Sweet onions work beautifully, but any onion will do.
  • 2 tsp kosher salt Divided; use coarse salt for better flavor absorption.
  • 1 tbsp minced garlic Fresh garlic adds a punch, but jarred can work in a pinch.
  • 3 cups shredded rotisserie chicken Ensure to remove the skin.
  • 3 tbsp chili powder Choose a good quality blend for optimal flavor.
  • 2 cups cooked rice Leftover rice works perfectly, or use quinoa for a healthy twist.
  • 1 15 oz can black beans Rinsed and drained; a great source of protein.
  • 1 cup frozen corn No need to thaw; it will cook beautifully in the oven.
  • 1 cup jarred salsa Choose your favorite brand; a medium heat salsa is recommended.
  • 1 cup sour cream Greek yogurt can be used for a healthier option.
  • 3 cups shredded Mexican blend or cheddar cheese Divided; pre-shredded cheese is preferred for convenience.

Method
 

Preparation
  1. Preheat your oven to 375°F. Lightly grease a 9x13-inch baking dish with cooking spray or oil.
  2. Sauté the onions and salt in oil until soft and golden, about 5 to 7 minutes. Add minced garlic and cook for 1 more minute.
Filling
  1. Add the shredded chicken and chili powder to the onion mixture, stirring to coat. Warm through for 2 to 3 minutes.
  2. Stir in the rice, black beans, corn, salsa, sour cream, remaining salt, and 1 cup of cheese. Mix well.
Baking
  1. Spread the filling evenly into the baking dish. Top with the remaining cheese.
  2. Bake for 20 to 25 minutes until hot and bubbly. Let cool slightly before serving.
Serving
  1. Add your desired toppings and serve warm.

Notes

Use ingredients at room temperature for best results. This casserole can be prepared a day ahead and refrigerated before baking.
