Preparation
- Preheat your oven to 375°F. Lightly grease a 9x13-inch baking dish with cooking spray or oil.
- Sauté the onions and salt in oil until soft and golden, about 5 to 7 minutes. Add minced garlic and cook for 1 more minute.
Filling
- Add the shredded chicken and chili powder to the onion mixture, stirring to coat. Warm through for 2 to 3 minutes.
- Stir in the rice, black beans, corn, salsa, sour cream, remaining salt, and 1 cup of cheese. Mix well.
Baking
- Spread the filling evenly into the baking dish. Top with the remaining cheese.
- Bake for 20 to 25 minutes until hot and bubbly. Let cool slightly before serving.
Serving
- Add your desired toppings and serve warm.
Notes
