Ingredients
  

For the Dough
  • 2 1/4 cups almond flour Blanched almond flour preferred for finer texture.
  • 1 cup Fage 5 percent Greek yogurt Rich in protein, can substitute with dairy-free yogurt.
  • 2 tablespoons Fage 5 percent Greek yogurt
  • 1/2 teaspoon salt Kosher salt works well.
  • 1/3 cup everything bagel seasoning Use a quality brand or make your own.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy clean-up.
  2. In a medium bowl, combine almond flour and salt. Stir until mixed. Add Greek yogurt and mix until a cohesive dough forms.
  3. Divide the dough into 16 equal portions and roll each portion into a ball.
Baking
  1. Coat each dough ball in everything bagel seasoning, gently pressing to help it stick. Place the bites on the lined baking sheet, about 1 inch apart.
  2. Bake for 20-24 minutes, or until they turn golden brown.
  3. Once baked, let them cool on the pan for 30 minutes before serving.

Notes

These bites store beautifully in an airtight container for up to 5 days in the fridge or can be frozen for up to 3 months. Ensure yogurt is at room temperature and avoid over-kneading to keep bases light.
