Preparation
- In a small bowl, add 1 1/2 cups of graham cracker crumbs and 1/2 cup of melted unsalted butter. Mix thoroughly.
- Evenly press the crumb mixture into the bottom and sides of a 9-inch pie pan.
- In a large mixing bowl, add 8 ounces of room temperature cream cheese and beat until smooth and creamy.
- Add 1 can of sweetened condensed milk and 1/2 cup of key lime juice to the cream cheese. Mix until fully combined.
- Pour the filling over your graham cracker crust and spread evenly.
- Refrigerate the pie until set, at least 1 hour, preferably overnight.
- Just before serving, garnish with fresh key lime slices and a dollop of whipped cream.
Notes
For the crust, use the bottom of a measuring cup for even pressure. Allow for chilling time for the best texture, and consider making the pie a day in advance to allow flavors to meld.
