For the filling

  • 0.5 cups 1/2 cup key lime juice Freshly squeezed juice offers the best flavor.

Preparation
  1. In a small bowl, add 1 1/2 cups of graham cracker crumbs and 1/2 cup of melted unsalted butter. Mix thoroughly.
  2. Evenly press the crumb mixture into the bottom and sides of a 9-inch pie pan.
  3. In a large mixing bowl, add 8 ounces of room temperature cream cheese and beat until smooth and creamy.
  4. Add 1 can of sweetened condensed milk and 1/2 cup of key lime juice to the cream cheese. Mix until fully combined.
  5. Pour the filling over your graham cracker crust and spread evenly.
  6. Refrigerate the pie until set, at least 1 hour, preferably overnight.
  7. Just before serving, garnish with fresh key lime slices and a dollop of whipped cream.

Notes

For the crust, use the bottom of a measuring cup for even pressure. Allow for chilling time for the best texture, and consider making the pie a day in advance to allow flavors to meld.
