  • 8 oz spaghetti Use high-quality pasta for the best texture.
  • 1.5 tbsp olive oil Use extra virgin for superior flavor.

Preparation
  1. Thinly slice the garlic cloves. Grate the parmesan and chop the parsley.
Cooking
  1. In a large pot over medium heat, heat the olive oil. Gently add the sliced garlic and cook for about 2-3 minutes until golden and fragrant.
  2. Pour enough water to cover the spaghetti (approximately 4 cups). Add the salt and bring it to a rolling boil.
  3. Add the spaghetti to the boiling water and cook according to package instructions until al dente, typically about 9-11 minutes.
  4. Once the pasta is cooked, reduce the heat to low and stir in the grated parmesan, sun-dried tomatoes, and pepper. Mix until the cheese melts and coats the noodles.
  5. Remove the pot from heat and fold in the fresh parsley. Serve immediately, garnishing with extra parmesan and herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. A drizzle of good-quality olive oil before serving can enhance the dish's flavor.
