  • Salt and pepper to taste

  • 1 whole lemon juiced and zested
  • 2 cloves garlic minced
  • 1 handful fresh herbs like parsley or dill

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Pat the cod fillets dry with paper towels.
Seasoning
  1. Drizzle olive oil in a heavy-bottomed cast iron skillet. Sprinkle salt and pepper over the fillets, then rub in the minced garlic.
Citrusy Addition
  1. Drizzle lemon juice over the fish and spread lemon zest and chopped herbs on top.
Searing
  1. Heat the skillet over medium-high heat, then place the cod fillets skin-side down in the skillet. Sear for 2-3 minutes.
Baking
  1. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the fish is opaque.
