Preparation
- Preheat your broiler to 500°F and position the oven rack about 4-6 inches from the heat source.
- In a small bowl, mix together the brown sugar, paprika, garlic powder, kosher salt, black pepper, and cayenne.
- Drizzle the olive oil over the pork chops, coating them evenly. Rub the spice mix generously over both sides of the chops.
Cooking
- Place the pork chops on a baking sheet and broil for 3 minutes.
- Rotate the pan to ensure even cooking and broil for another 3 minutes.
- Use a meat thermometer to check the chops; they’re done when they reach an internal temperature of 140-145°F.
- If they’re not quite there, flip them and broil for another 1-2 minutes.
- Remove the pork chops from the oven and let them rest for 5 minutes before serving.
Notes
For extra tenderness, you can marinate the pork chops in seasoned oil for a few hours or overnight. Store leftovers in an airtight container in the fridge for up to 3 days.
