  • 4 pieces pork chops (¾-1 inch thick, boneless or bone-in) Choose high-quality, fresh chops for the best flavor.
  • 2 tbsp brown sugar This brings a slight sweetness and helps with the caramelization.
  • 2 tsp paprika Adds a mild smokiness that elevates the dish.
  • 2 tsp garlic powder Essential for depth of flavor.
  • 1.5 tsp kosher salt Adjust according to taste.
  • 0.5 tsp black pepper Freshly ground is ideal for more flavor.
  • 0.5 tsp cayenne pepper (optional) Spice it up if desired!
  • 2 tbsp olive oil Use good quality extra virgin olive oil for enhanced flavor.

Method
 

Preparation
  1. Preheat your broiler to 500°F and position the oven rack about 4-6 inches from the heat source.
  2. In a small bowl, mix together the brown sugar, paprika, garlic powder, kosher salt, black pepper, and cayenne.
  3. Drizzle the olive oil over the pork chops, coating them evenly. Rub the spice mix generously over both sides of the chops.
Cooking
  1. Place the pork chops on a baking sheet and broil for 3 minutes.
  2. Rotate the pan to ensure even cooking and broil for another 3 minutes.
  3. Use a meat thermometer to check the chops; they’re done when they reach an internal temperature of 140-145°F.
  4. If they’re not quite there, flip them and broil for another 1-2 minutes.
  5. Remove the pork chops from the oven and let them rest for 5 minutes before serving.

Notes

For extra tenderness, you can marinate the pork chops in seasoned oil for a few hours or overnight. Store leftovers in an airtight container in the fridge for up to 3 days.
