Ingredients
  

Bread and Toppings
  • 1 loaf (16 ounces) brioche bread, cut into 1/2 inch cubes Choose fresh, high-quality brioche.
  • 2 medium bananas, diced
  • 1/4 cup (64.5 g) creamy peanut butter, melted (for topping)
  • 1 ripe banana, sliced (for topping)
  • Peanuts, chopped (for topping)
  • Maple syrup, for serving (optional)
Custard Mixture
  • 8 large eggs, room temperature, beaten
  • 2 cups (490 g) whole milk, room temperature Ensure it's at room temperature for best results.
  • 1/2 cup (119 g) heavy whipping cream Can substitute with full-fat coconut milk.
  • 1/2 cup (129 g) creamy peanut butter, melted Recommended brands: Jif or Skippy.
  • 1/4 cup (50 g) light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon kosher salt

Method
 

Preparation
  1. Spray a 9x13 inch baking dish with nonstick cooking spray.
  2. Place half the bread cubes in the dish, followed by half of the diced bananas.
  3. Top with another layer of the remaining bread and bananas.
  4. In a large bowl, whisk together the eggs, whole milk, heavy cream, melted peanut butter, brown sugar, vanilla extract, cinnamon, and kosher salt until smooth.
  5. Pour the egg mixture evenly over the layered bread and bananas, pressing down gently.
  6. Cover with plastic wrap and refrigerate overnight.
Baking
  1. Preheat your oven to 350°F (175°C). Remove the plastic wrap and let it sit at room temperature for 20-30 minutes.
  2. Cover the dish with aluminum foil and bake for 30 minutes.
  3. Remove the foil and bake for another 15-20 minutes, until the center is set.
  4. Let it cool slightly before serving.
  5. Top with melted peanut butter, sliced bananas, and chopped peanuts. Serve with maple syrup if desired.

Notes

For best results, allow ingredients to come to room temperature before mixing. Adjust flavors and toppings to your liking.
