Ingredients
  

For the Pork Chops
  • 2 pieces bone-in pork chops Choose thick cuts for optimum juiciness.
  • 3 tbsp olive oil Use high-quality extra virgin olive oil.
  • 1/2 tsp smoked paprika A good brand like Penzey’s is recommended.
  • Salt Salt & black pepper To season the pork chops.
For the Vegetables
  • 1 large onion Sweet or yellow onions work well.
  • 1 medium zucchini Look for firm and smaller ones for tenderness.
  • 1 medium yellow squash Adds color and nutrition.
  • 3 tbsp fresh dill Fresh is better; dried can be used in a pinch.
  • 2 cloves garlic Minced for flavor boost.

Method
 

Preparation
  1. Pat the pork chops dry with paper towels, then season both sides with salt, black pepper, and smoked paprika. Let sit.
  2. Slice the onion, zucchini, and yellow squash into thin rounds, and mince the garlic.
Cooking
  1. Heat 3 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Carefully place the seasoned pork chops in the skillet and sear for about 7-10 minutes on each side until golden and the internal temperature reaches 145°F.
  3. Remove the chops from the skillet and keep warm under foil.
  4. In the same skillet, sauté onion and garlic for about 2 minutes until softened.
  5. Add sliced zucchini and yellow squash; cook until tender, about 5-7 minutes. Season vegetables with salt and pepper.
  6. Stir in the fresh dill and return the pork chops to the skillet to soak in flavors for another minute.
  7. Plate the pork chops alongside the sautéed vegetables and garnish with additional dill if desired.

Notes

Let meat rest after cooking to retain juices. Adjust seasoning to taste. Can prep vegetables a day before to save time.
