Method
Prepare Cooking Liquid
- In a medium bowl, whisk together the chicken broth, soy sauce, balsamic vinegar, honey, garlic powder, and minced garlic until well combined.
Prepare Pork
- Pat the pork loin dry with paper towels and season generously with kosher salt, black pepper, onion powder, and garlic powder.
- If preferred, let the pork marinate for 30 minutes to overnight.
Sear the Pork (Optional)
- Heat avocado oil in a large skillet over medium-high heat. Sear the pork loin on all sides until beautifully brown.
Assemble + Cook
- Place sliced onion at the bottom of the slow cooker.
- Place seasoned pork loin on top of onions and pour prepared cooking liquid over it.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until the pork reaches an internal temperature of 145°F.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months. For crispier edges, broil the pork on high for 3-4 minutes after cooking.
