Ingredients
  

For the Cooking Liquid
  • 1/2 cup chicken broth Low-sodium is best for flavor control.
  • 1/4 cup soy sauce Tamari works for gluten-free swaps!
  • 1/4 cup balsamic vinegar Adds tanginess and depth.
  • 3 tbsp honey Just the right amount of sweetness.
  • 1 tsp garlic powder For extra garlic flavor.
  • 4 tsp minced garlic Approximately 4 large cloves.
For the Pork Loin
  • 4 lb pork loin Cut in half if it doesn’t fit in your slow cooker.
  • 1 large onion, sliced For sweetness and depth.
  • 3 tsp kosher salt Elevates the flavors; adjust for taste.
  • 1 tsp ground black pepper Freshly ground provides the best flavor.
  • 1 tsp onion powder A layer of flavor enhancement.
  • 2 tbsp avocado oil High smoke point and light in flavor.
  • 2 tbsp butter Best at room temperature for mixing.

Method
 

Prepare Cooking Liquid
  1. In a medium bowl, whisk together the chicken broth, soy sauce, balsamic vinegar, honey, garlic powder, and minced garlic until well combined.
Prepare Pork
  1. Pat the pork loin dry with paper towels and season generously with kosher salt, black pepper, onion powder, and garlic powder.
  2. If preferred, let the pork marinate for 30 minutes to overnight.
Sear the Pork (Optional)
  1. Heat avocado oil in a large skillet over medium-high heat. Sear the pork loin on all sides until beautifully brown.
Assemble + Cook
  1. Place sliced onion at the bottom of the slow cooker.
  2. Place seasoned pork loin on top of onions and pour prepared cooking liquid over it.
  3. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until the pork reaches an internal temperature of 145°F.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months. For crispier edges, broil the pork on high for 3-4 minutes after cooking.
