Preparation
- In a small bowl, whisk together the strawberry gelatin and cold water until mostly dissolved, about 3-5 minutes.
- Using a stand mixer, mix softened cream cheese on medium speed until smooth, about 2 minutes. Add sifted confectioners' sugar, dissolved gelatin, sour cream, and vanilla extract. Mix until creamy and smooth, about 2 minutes.
- In a separate bowl, beat heavy whipping cream on high speed until stiff peaks form, about 3-4 minutes. Avoid over-whipping.
- Gently fold the whipped cream into the cream cheese mixture in thirds until no streaks remain.
Chilling
- Transfer the mousse into individual serving cups or a large bowl. Cover with plastic wrap and chill in the refrigerator for at least 2 hours.
Serving
- Garnish with fresh strawberry slices or a sprig of mint and serve.
Notes
Store in an airtight container in the refrigerator for up to 3 days. This mousse can be made a day ahead for best flavor.
