Mousse Ingredients
  • 1 package (3 ounces) strawberry gelatin Can use sugar-free variant if preferred.
  • 1/4 cup cold water
  • 1 package (8 ounces) cream cheese, softened Room temperature helps with mixing.
  • 1/2 cup confectioners' sugar Sifted for a smoother texture.
  • 1/4 cup sour cream Full-fat recommended for creaminess.
  • 1 teaspoon vanilla extract Use pure vanilla for best flavor.
  • 1 cup heavy whipping cream Use high-fat for best volume.

Method
 

Preparation
  1. In a small bowl, whisk together the strawberry gelatin and cold water until mostly dissolved, about 3-5 minutes.
  2. Using a stand mixer, mix softened cream cheese on medium speed until smooth, about 2 minutes. Add sifted confectioners' sugar, dissolved gelatin, sour cream, and vanilla extract. Mix until creamy and smooth, about 2 minutes.
  3. In a separate bowl, beat heavy whipping cream on high speed until stiff peaks form, about 3-4 minutes. Avoid over-whipping.
  4. Gently fold the whipped cream into the cream cheese mixture in thirds until no streaks remain.
Chilling
  1. Transfer the mousse into individual serving cups or a large bowl. Cover with plastic wrap and chill in the refrigerator for at least 2 hours.
Serving
  1. Garnish with fresh strawberry slices or a sprig of mint and serve.

Notes

Store in an airtight container in the refrigerator for up to 3 days. This mousse can be made a day ahead for best flavor.
