Ingredients
  

Yogurt Base
  • 1 cup yogurt Fage 5% Greek yogurt for creaminess
  • 2 tbsp vanilla Pure vanilla extract for best flavor
  • 2.5 tsp lemon zest Freshly grated; don’t skip the zest
  • 1/8 tsp cardamom Adds unexpected warmth
  • 1/8 tsp salt Balances the sweetness
  • 1 tbsp honey Or maple syrup for a vegan option
Blueberry Ingredients
  • 1/2 cup freeze-dried blueberries Crushed into a fine powder; use a blender
  • 2 cups blueberries Preferably Driscoll's; they're plump and sweet

Method
 

Mix the Base
  1. In a medium bowl, combine yogurt, vanilla, lemon zest, cardamom, and salt. Whisk until smooth.
Sweeten It Up
  1. Stir in honey until fully combined.
Add the Blueberry Punch
  1. Crush freeze-dried blueberries into a fine powder using a blender. Fold this into your yogurt mixture.
Prepare Your Baking Sheet
  1. Line a baking sheet with parchment paper for easy removal.
Incorporate Fresh Blueberries
  1. Gently fold in fresh blueberries, taking care not to break them apart.
Form the Bites
  1. Using a fork, coat each fresh blueberry in the yogurt mixture, then place them on the prepared baking sheet.
Freeze
  1. Freeze for a minimum of 2 hours or until solid.
Storage
  1. Transfer the bites to a freezer-safe container. Remove from the freezer about 5 minutes before serving.

Notes

For extra flair, sprinkle some crushed nuts or dark chocolate shavings on top before freezing. Avoid overmixing when incorporating the fresh blueberries.
