For the Vanilla Cold Foam

  • 2 tablespoons whole milk

For the Matcha Base
  • 2 teaspoons ceremonial-grade matcha powder Brands like Ippodo or Encha make a delightful difference
  • 1/4 cup hot water Approximately 175°F
  • 1 cup ice cubes
  • 1 cup milk Any type works, with oat milk giving a lovely creaminess
  • pinch sea salt To enhance flavors

Method
 

Make the Vanilla Cold Foam
  1. In a medium bowl, combine heavy cream, milk, sugar, and vanilla essence.
  2. Use an electric mixer on medium-high speed for about 2 to 3 minutes until stiff peaks form.
  3. Transfer to the refrigerator to keep cool while preparing the matcha base.
Prepare the Matcha
  1. Heat 1/4 cup of water to about 175°F.
  2. Sift matcha powder into a small bowl.
  3. Gradually add hot water and whisk the matcha for about 1-2 minutes until fully dissolved and frothy.
Assemble Your Latte
  1. In a tall glass, add ice cubes.
  2. Pour in milk, followed by the whisked matcha base. Stir gently to combine.
  3. Retrieve the chilled vanilla cold foam and scoop it on top.
  4. Finish with a pinch of sea salt on top of the foam.
Serve Immediately

Notes

High-quality matcha is a game-changer. Store leftover cold foam in an airtight container in the fridge for up to 48 hours. You can prepare the vanilla foam a day in advance.
