Cooking Preparation
  1. In a heavy-bottomed cast iron skillet or wok, add 2 tablespoons of vegetable oil and heat over high heat until shimmering.
  2. Add the sliced beef to the skillet, stirring quickly to brown on all sides, about 2-3 minutes. Remove and set aside.
  3. In the same skillet, add sliced bell pepper, broccoli florets, and snow peas. Stir-fry for 2-3 minutes until the vegetables are bright and crisp.
  4. Stir in minced garlic and ginger, cooking for an additional minute until fragrant.
  5. Return the browned beef to the skillet.
  6. In a small bowl, whisk together soy sauce, sugar, rice vinegar, and Szechuan peppercorns. Pour over the beef and vegetables.
  7. Stir everything together and let it cook for another 2-3 minutes. Add chili paste for an extra kick if desired.
  8. Adjust seasoning with salt and pepper, and serve immediately, ideally over steamed rice or noodles.

Notes

For presentation, serve your Szechuan Beef on a vibrant platter or individual bowls, garnished with green onions and sesame seeds. It pairs well with a chilled Asian lager or a light-bodied red wine. This dish is perfect for a fun family dinner or an elegant gathering with friends.
