  • 1.5 tsp Italian seasoning For a classic taste
  • 14 oz diced tomatoes Canned varieties like San Marzano for richness
  • 1.75 cups cooked rice Any kind you love—white, brown, or even cauliflower!
  • 1 tbsp tomato paste For added richness
  • 1/2 cup fresh parsley, chopped Flat-leaf parsley adds a fresh note
  • 2/3 cup mozzarella cheese, shredded I recommend fresh mozzarella for a gooey texture
  • Salt to taste Salt

  • 3-4 pieces bell peppers, halved lengthwise and seeds removed Choose a mix of colors for a vibrant dish!
  • 1/2 cup water Keeps the peppers moist while baking
  • 1.5 cups mozzarella cheese, freshly shredded For the ultimate cheesy top layer
  • 1/3 cup parmesan cheese, grated A sprinkle of this adds that gourmet touch

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Slice the bell peppers in half lengthwise and remove the seeds and membranes. Arrange them in a baking dish.
Cooking
  1. In a skillet over medium-high heat, add olive oil and ground turkey. Cook for about 6-8 minutes until browned.
  2. Add diced onion and minced garlic. Cook for 1-2 minutes until fragrant.
  3. Lower the heat and add Italian seasoning, tomato paste, diced tomatoes, cooked rice, salt, pepper, chopped parsley, and mozzarella cheese. Mix until combined.
  4. Fill each pepper half with the turkey mixture. Pour water into the baking dish around the peppers and cover tightly with foil.
  5. Bake for 30-35 minutes until the peppers are tender.
  6. Remove foil and top with remaining mozzarella and parmesan. Return to oven for 10-12 minutes until cheese is melted. Broil for 1-2 minutes for a crispy top.
Serving
  1. Garnish with fresh parsley before serving.

Notes

Always opt for fresh, high-quality ingredients. You can swap ground turkey for ground chicken or beef if preferred.
