Preparation
- Preheat your oven to 375°F (190°C).
- Slice the bell peppers in half lengthwise and remove the seeds and membranes. Arrange them in a baking dish.
Cooking
- In a skillet over medium-high heat, add olive oil and ground turkey. Cook for about 6-8 minutes until browned.
- Add diced onion and minced garlic. Cook for 1-2 minutes until fragrant.
- Lower the heat and add Italian seasoning, tomato paste, diced tomatoes, cooked rice, salt, pepper, chopped parsley, and mozzarella cheese. Mix until combined.
- Fill each pepper half with the turkey mixture. Pour water into the baking dish around the peppers and cover tightly with foil.
- Bake for 30-35 minutes until the peppers are tender.
- Remove foil and top with remaining mozzarella and parmesan. Return to oven for 10-12 minutes until cheese is melted. Broil for 1-2 minutes for a crispy top.
Serving
- Garnish with fresh parsley before serving.
