- Gently place the whole chicken on top of the layered veggies, breast-side up.
- Drizzle olive oil over the chicken and massage it into the skin.

- If available, add giblets around the chicken to enhance the broth's flavor.
- Cover and set the slow cooker to LOW for 7 to 8 hours.
- Check for doneness with a meat thermometer; it should read 165°F when done.
- Discard giblets and serve the chicken with some broth on top.
