  • 1 whole chicken (3 to 4 lb) Free-range chicken is recommended for best flavor.
  • 1 tbsp extra-virgin olive oil Quality matters! Try using a cold-pressed organic option.
  • 2.25 to 3 tsp kosher salt (3/4 tsp per pound of chicken) — adjust to preference.
  • 1 tsp smoked or sweet paprika Add a bit of heat or switch for Italian seasoning if preferred.
  • 1 tsp onion powder This amplifies the onion flavor but can be skipped.
  • 1/2 tsp freshly ground black pepper Use freshly ground for the best flavor.
  • 4 cloves garlic (minced) Feel free to add more for extra punch.
  • 1 yellow onion (sliced into rings) Sweet onions add a lovely subtle flavor.

Method
 

Preparation
  1. Layer the sliced onion and minced garlic at the bottom of your slow cooker.
  2. Gently place the whole chicken on top of the layered veggies, breast-side up.
  3. Drizzle olive oil over the chicken and massage it into the skin.
  4. Combine kosher salt, smoked paprika, onion powder, and black pepper; season the chicken generously.
  5. If available, add giblets around the chicken to enhance the broth's flavor.
  6. Cover and set the slow cooker to LOW for 7 to 8 hours.
  7. Check for doneness with a meat thermometer; it should read 165°F when done.
  8. Discard giblets and serve the chicken with some broth on top.

Notes

To avoid dry chicken, check for doneness with a thermometer rather than relying solely on time. You can also sear the chicken skin in a skillet for added flavor and a crispy texture.
