For the Chicken Skewers
  • 1 pound chicken breast, cut into strips Use free-range chicken for enhanced flavor.
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar Consider swapping with monk fruit or stevia for a healthier option.
  • 1 tablespoon coconut milk
  • 1 tablespoon lime juice Adds brightness.
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Skewers (soaked in water if wooden)
For the Peanut Sauce
  • 1/2 cup peanut butter Use natural, unsweetened for best flavor.
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 1 teaspoon garlic, minced
  • Chili flakes to taste For added spice.

Preparation
  1. In a bowl, combine the soy sauce, brown sugar, coconut milk, lime juice, garlic, and ginger. Whisk until smooth to create the marinade.
  2. Add the chicken strips to the marinade and let them sit for at least 30 minutes.
Peanut Sauce Preparation
  1. In a small saucepan over low heat, mix the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, garlic, and chili flakes until smooth.
Grilling
  1. Preheat your grill or grill pan over medium heat.
  2. Thread the marinated chicken onto skewers.
  3. Grill the skewers for about 6-8 minutes on each side until fully cooked.
  4. Serve the skewers hot with the peanut sauce for dipping.
