  • 1-2 Packs Oreo cookies (approx. 16–20 cookies) the star of the show

  • 100 g Brown sugar for richness
  • 1 Large Egg for binding
  • 1 tsp Vanilla extract for flavor
  • 120 g All-purpose flour the base of the cookies
  • 1/2 tsp Baking powder adds a lift
  • Pinch Salt complements sweetness
  • 1/2 cup Chocolate chips extra indulgence

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F) and line an 8×8 inch square pan with parchment paper.
Brownie Layer
  1. In a mixing bowl, cream the butter, white sugar, and brown sugar until light and fluffy.
  2. Beat in the eggs and vanilla extract.
  3. Stir in the melted dark chocolate until well combined.
  4. Fold in the flour, cocoa powder, baking powder, and salt until a thick batter forms.
  5. Spread the batter evenly into the prepared pan.
Oreo Layer
  1. Place a single layer of Oreos on top of the brownie batter, pressing them in slightly to ensure they stick.
Cookie Layer
  1. In a separate bowl, cream together the butter and brown sugar until fluffy.
  2. Add the egg and vanilla extract, and mix until smooth.
  3. Fold in the flour, baking powder, salt, and chocolate chips to create a thick cookie dough.
Assembly and Baking
  1. Drop spoonfuls of the cookie dough over the Oreos, gently flattening them to cover the gaps.
  2. Bake for 40–45 minutes until the cookie top is golden and the edges pull away from the pan.
Cooling
  1. Let the brookies cool completely in the pan before lifting them out and slicing into squares.
