  • 1 cup Cherry tomatoes, halved
  • 1 cup Chicken broth Use low-sodium broth to control sodium intake.
  • 1 tablespoon Italian seasoning
  • 8 ounces Whole wheat or high protein pasta Can substitute with gluten-free options.
  • Salt and pepper to taste

Preparation
  1. In a heavy-bottomed cast iron skillet, heat olive oil over medium heat, until it shimmers.
  2. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Toss in the cherry tomatoes and spinach, cooking until the spinach wilts and tomatoes soften.
Cooking
  1. Place the salmon fillets in the skillet, skin side down, and season with Italian seasoning, salt, and pepper.
  2. Pour in chicken broth, then cover the skillet and cook the salmon until flaky, approximately 10-15 minutes.
  3. Meanwhile, cook the whole wheat or high protein pasta according to package instructions until al dente.
  4. Serve the Tuscan salmon over the pasta, drizzling the sauce from the skillet generously on top.

Notes

For an elegant presentation, plate the Tuscan salmon atop a nest of pasta and garnish with freshly chopped basil or parsley. Pair with a chilled glass of Pinot Grigio.
