- Add minced garlic and sauté until fragrant, about 30 seconds.
- Toss in the cherry tomatoes and spinach, cooking until the spinach wilts and tomatoes soften.
Cooking
- Place the salmon fillets in the skillet, skin side down, and season with Italian seasoning, salt, and pepper.
- Pour in chicken broth, then cover the skillet and cook the salmon until flaky, approximately 10-15 minutes.
- Meanwhile, cook the whole wheat or high protein pasta according to package instructions until al dente.
- Serve the Tuscan salmon over the pasta, drizzling the sauce from the skillet generously on top.
Notes
For an elegant presentation, plate the Tuscan salmon atop a nest of pasta and garnish with freshly chopped basil or parsley. Pair with a chilled glass of Pinot Grigio.
