For the Salmon
  • 4 fillets Fresh salmon fillets, preferably wild-caught Look for thick, bright, and firm pieces.
  • 2 tablespoons Olive oil Use cold-pressed, high-quality olive oil.
  • 1 tablespoon Unsalted butter Room temperature for easy mixing.
  • 1 medium Lemon (zest and juice) Fresh for a better flavor.
  • 2 cloves Garlic Minced; substitute with garlic powder if necessary.
  • 1 tablespoon Fresh herbs (dill, parsley, or thyme) Use what you have or prefer.
  • to taste Salt Freshly ground for best flavor.
  • to taste Black pepper Freshly ground for best flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the salmon fillet under cold water and pat dry with paper towels.
  3. Keep the skin on for moisture and flavor. If using skinless fillets, be extra careful not to overcook!
Making the Marinade
  1. In a small bowl, mix together olive oil, the juice and zest of one lemon, minced garlic, salt, and pepper.
  2. Rub this mixture generously over your salmon fillets.
Baking
  1. Place the salmon skin-side down in a baking dish lined with parchment paper.
  2. Bake in the preheated oven for 12-15 minutes.
  3. Look for a light pink color in the center that flakes easily with a fork.
Finishing Touches
  1. Let the salmon rest for a couple of minutes before serving.

Notes

For perfect results, avoid overcooking and skip the marinade.
